  • 4 cups stale bread preferably Italian or French
  • 1/4 cup olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • Large skillet
  • Spatula
  • Baking sheet (optional)
  • Oven (if toasting)

Method
 

  1. Step 1: Tear the stale bread into smaller pieces to prepare for processing.
  2. Step 2: Place the bread pieces into a food processor and pulse until they form coarse crumbs.
  3. Step 3: While pulsing, add the garlic powder, dried oregano, dried basil, salt, and black pepper to the crumbs.
  4. Step 4: With the processor running, slowly drizzle in the olive oil until the crumbs are evenly coated.
  5. Step 5: Heat a large skillet over medium heat and add the breadcrumb mixture; cook, stirring frequently, until golden brown, about 5 to 7 minutes.
  6. Step 6: Remove the skillet from heat and transfer the toasted breadcrumbs to a plate; let them cool completely to prevent sogginess.
  7. Step 7: Store the cooled breadcrumbs in an airtight container at room temperature for up to one week.
  8. Step 8: For longer storage, place the cooled breadcrumbs in a freezer-safe bag and freeze for up to three months.

Notes

For extra flavor, add grated Parmesan cheese while processing. Store at room temperature for up to one week or freeze for up to three months.
