  • 2 tablespoons pumpkin puree
  • 1 tablespoon maple syrup or brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • pinch ground cloves about 1/16 teaspoon
  • pinch ground ginger optional
  • 1/4 teaspoon vanilla extract
  • 2 shots espresso about 2 ounces
  • 1 cup whole milk or milk of choice
  • about 1 cup ice cubes
  • whipped cream optional topping

Method
 

  1. Add pumpkin puree, maple syrup, ground cinnamon, ground nutmeg, ground cloves, ground ginger, and vanilla extract to a tall glass and whisk until smooth and free of lumps.
  2. Pull two shots of espresso using an espresso machine or brew strong coffee in a French press; if using hot water, let the espresso cool for one minute.
  3. Slowly pour the espresso into the pumpkin spice mixture while stirring constantly to fully combine flavors.
  4. Fill the glass three-quarters full with ice cubes, packing them in to keep the drink cold without diluting it quickly.
  5. Froth 1 cup of milk using a milk frother or heat milk to 60°C (140°F) on the stovetop and whisk vigorously for about 1 minute until frothy.
  6. Gently pour the frothed milk over the ice and pumpkin-espresso mixture, leaving 1/2 inch space at the top for foam.
  7. Stir gently with a long spoon to blend layers and ensure consistent flavor in every sip.
  8. Top with whipped cream and a dusting of ground cinnamon if desired, then serve immediately.

Notes

Make a batch of the pumpkin spice base and store it in an airtight container in the refrigerator for up to two weeks. Shake or stir before use and adjust sweetness to taste.
