  • 4 tablespoons butterscotch syrup
  • 1 cup cream soda chilled
  • 1 cup whole milk
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whipped cream
  • 2 tablespoons butterscotch bits or toffee chips optional

Method
 

  1. Fill each mug with hot water and let sit for 1 minute; discard the water and dry the mugs.
  2. In a small saucepan over medium heat, combine 4 tablespoons butterscotch syrup and 1 tablespoon butter; stir until melted and smooth, about 1 minute.
  3. Add 1 cup whole milk to the saucepan and heat, stirring constantly, until steaming and reaching 160-170°F, about 2 minutes.
  4. Remove the pan from heat and stir in 1/2 teaspoon vanilla extract until well combined.
  5. Divide the hot butterscotch-milk mixture evenly between the two warmed mugs, filling each about three-quarters full.
  6. Slowly pour 1/2 cup chilled cream soda into each mug while stirring gently to maintain carbonation.
  7. Top each mug with a generous 1/2 cup of whipped cream.
  8. Sprinkle 2 tablespoons butterscotch bits or toffee chips over the whipped cream and serve immediately.

Notes

Prepare the butterscotch-milk base up to three days ahead and store in an airtight container in the refrigerator; reheat gently before serving.
