Ingredients

  • 3 cups fresh honeydew melon cut into chunks and seeds removed
  • 1 medium banana peeled and sliced
  • 1/2 cup plain Greek yogurt or regular yogurt
  • 1/2 cup coconut milk or milk of choice
  • 1/2 cup ice cubes
  • 1 tablespoon honey optional for extra sweetness
  • 1/4 teaspoon vanilla extract optional

Method
 

  1. Select a ripe honeydew melon, cut it in half, scoop out the seeds, and cut the flesh into chunks.
  2. Slide a knife between the flesh and rind, discard the rind, and cut the melon into smaller chunks.
  3. Peel the banana and slice it into one-inch pieces.
  4. Pour the coconut milk into the blender.
  5. Add the Greek yogurt on top of the milk.
  6. Layer the honeydew chunks and banana slices into the blender, then add the ice cubes.
  7. Blend on high speed for 45 seconds to one minute until the mixture is smooth and silky.
  8. Taste the smoothie and add honey or vanilla extract if extra sweetness or flavor is desired, blending briefly to combine.
  9. Divide the smoothie between glasses and serve immediately for best texture.

Notes

Freeze honeydew chunks in advance to avoid adding ice and prevent the smoothie from becoming watery as the ice melts.
