Ingredients

  • 1 cup fresh lime juice from approximately 6-8 medium limes
  • 1/2 cup fresh lemon juice from approximately 3-4 medium lemons
  • 1/2 cup simple syrup equal parts sugar and water
  • 1 teaspoon lime zest optional
  • 1/4 teaspoon fine sea salt

  • Medium mixing bowl
  • Measuring cups and spoons

  • Fine mesh strainer
  • Glass storage bottle or jar with lid

Method
 

  1. Wash limes and lemons under cold running water and pat dry.
  2. Roll each lime and lemon firmly on the counter to soften before juicing.
  3. Cut limes in half and juice them to obtain about 1 cup of lime juice.
  4. Cut lemons in half and juice them to obtain about 1/2 cup of lemon juice.
  5. If desired, strain the combined citrus juices through a fine mesh strainer to remove pulp and seeds.
  6. In a small saucepan, combine 1/2 cup sugar with 1/2 cup hot water and stir until sugar dissolves; let cool slightly.
  7. In a mixing bowl, whisk together the citrus juices, cooled simple syrup, lime zest (if using), and sea salt until fully combined.
  8. Pour the mixer into a clean glass bottle or jar with a tight-fitting lid, leaving headspace; seal and refrigerate.

Notes

Store mixer in a sealed glass container in the refrigerator for up to two weeks and shake before each use.
