Ingredients

Main
  • 1 gallon apple cider fresh, unpasteurized is best
  • 1 cup granulated sugar for fermentation
  • 1 packet of champagne or cider yeast
  • 1 cup water if needed to dilute
  • Cinnamon sticks cloves, or ginger for flavor (optional)

Equipment

  • Large fermentation vessel (like a glass carboy)
  • Airlock and stopper
  • Funnel
  • Hydrometer (optional)
  • Bottling bucket or siphon
  • Clean bottles and caps

Method

  1. Gather all ingredients and equipment.
  2. Thoroughly clean your fermentation vessel to prevent any unwanted bacteria.
  3. Pour the apple cider into the fermentation vessel, leaving headspace at the top.
  4. Dissolve the granulated sugar in a small amount of warm water, then add it to the cider.
  5. Sprinkle the yeast on top of the mixture without stirring.
  6. Fit the airlock onto the fermentation vessel.
  7. Place the vessel in a cool, dark area for 1 to 2 weeks.
  8. Once fermentation slows down, siphon the cider into cleaned bottles, leaving some space at the top. Seal them with caps.

Notes

Serve your homemade hard cider chilled. It pairs well with sharp cheeses and hearty dishes.
