Ingredients
  

Main
  • 10 lbs Pale Malt 2-row
  • 2 lbs Flaked Oats
  • 2 lbs Wheat Malt
  • 1 oz Citra hops bittering
  • 2 oz Mosaic hops aroma
  • 2 oz Simcoe hops flavor
  • 1 packet New England Ale yeast
  • Priming sugar for carbonation

Equipment

  • Brewing kettle (at least 5 gallons)
  • Fermentation vessel with airlock
  • Sanitizer
  • Thermometer
  • Hydrometer
  • Stirring spoon
  • Bottling bucket and bottles
  • Funnel

Method
 

  1. Sanitize all equipment thoroughly to prevent contamination.
  2. Bring 3 gallons of water to a rolling boil in the brewing kettle.
  3. Add crushed pale malt, flaked oats, and wheat malt and hold mash at 152°F (67°C) for 60 minutes.
  4. Sparge the grains with additional water to collect about 6 gallons of wort.
  5. Bring the wort to a boil, add 1 oz Citra hops, and boil for 45 minutes.
  6. Turn off the heat and add 2 oz Mosaic hops and 2 oz Simcoe hops, whirlpool for 15 minutes.
  7. Cool the wort rapidly to 70°F (21°C) using a wort chiller or ice bath.
  8. Transfer the cooled wort to the fermentation vessel, pitch yeast, seal with an airlock, and ferment at 68-72°F (20-22°C) for two weeks.
  9. After fermentation, dissolve priming sugar, add to bottling bucket, bottle the beer, and carbonate at room temperature for two weeks before serving.

Notes

Store bottles in a cool, dark place and allow full carbonation for best mouthfeel.
