  • 1.5 ounces light or dark rum
  • 1 ounce amaretto liqueur
  • 3 ounces pineapple juice
  • 2 ounces cranberry juice
  • 0.5 ounce fresh lime juice
  • Ice cubes
  • Lime wheel or pineapple wedge for garnish

  • Jigger or shot glass for measuring

Method
 

  1. Pour 1.5 ounces of rum and 1 ounce of amaretto into your cocktail shaker.
  2. Add 3 ounces of pineapple juice, 2 ounces of cranberry juice, and 0.5 ounce of fresh lime juice to the shaker with your spirits.
  3. Add enough ice cubes to fill the shaker about three-quarters full.
  4. Seal your shaker and shake vigorously for 10 to 12 seconds, or until the outside becomes frosty and cold.
  5. Fill your highball or rocks glass with fresh ice cubes.
  6. Pour the shaken mixture through a cocktail strainer into your ice-filled glass.
  7. Add more ice on top if the liquid doesn't fill the glass completely.
  8. Place a lime wheel or pineapple wedge on the rim or float it in the drink for garnish and serve immediately.

Notes

Use freshly squeezed lime juice rather than bottled for best results. This drink scales easily from single servings to full pitchers for groups by multiplying ingredients. For parties, mix the batch without ice in a pitcher and store in the refrigerator for up to 24 hours, then serve over fresh ice. Experiment with spiced rum for added complexity once you've mastered the basic recipe.
