Ingredients
  

Main
  • 2 cups Everclear or high-proof vodka 190 proof Everclear or 100 proof vodka
  • 2 teaspoons pure vanilla extract
  • 1/4 cup fresh lemon juice from about 3 lemons
  • 1 cup simple syrup equal parts sugar and water, cooled

Equipment

  • One 750ml glass jar with an airtight lid
  • Measuring cups and spoons
  • A fine mesh strainer or cheesecloth
  • A funnel for pouring
  • Decorative glass bottles for storage (optional)
  • A dark, cool place for infusion

Method
 

  1. Gather and measure all ingredients and equipment on a clean workspace.
  2. If needed, combine 1 cup sugar and 1 cup water in a small saucepan and heat over medium until sugar dissolves, about 3 minutes. Remove from heat and cool to room temperature.
  3. Pour 2 cups Everclear or high-proof vodka into the 750ml glass jar.
  4. Add 2 teaspoons of pure vanilla extract to the jar.
  5. Add 1/4 cup of fresh lemon juice to the mixture.
  6. Pour in 1 cup of cooled simple syrup and stir gently to combine.
  7. Seal the jar tightly and shake vigorously for 1 minute to mix flavors evenly.
  8. Place the sealed jar in a dark, cool location away from light.
  9. For 7 days, shake the jar gently once daily to develop and meld flavors.
  10. After 7 days, strain the mixture through a fine mesh strainer or cheesecloth into clean bottles, label, and store.

Notes

Chill before serving. Shake daily during infusion for consistent flavor. Store in a cool, dark place.
