- Rinse and peel 2 tablespoons of fresh ginger and slice it thinly into coins or matchsticks.
- Pour 2 cups of filtered water into a small saucepan and place it over medium-high heat.
- Bring the water to a gentle boil, about 4 to 5 minutes, until small bubbles rise from the bottom.
- Add the sliced ginger to the boiling water and stir briefly.
- Drop 2 cinnamon sticks into the saucepan alongside the ginger.
- Reduce heat to medium-low and let the mixture simmer gently for 8 to 10 minutes.
- Strain the tea through a fine mesh strainer into two mugs, discarding the ginger and cinnamon.
- Stir in 1 teaspoon of raw honey and a squeeze of fresh lemon juice if desired, then serve hot.
Notes
Don’t discard the ginger slices and cinnamon sticks; reuse them for a second, milder infusion to save time and flavor.
