Ingredients

Main
  • 2 cups fresh ginger grated
  • 1 cup sugar can use brown sugar for deeper flavor
  • 1/4 teaspoon active dry yeast
  • 1/2 cup lemon juice freshly squeezed
  • 8 cups water

Equipment

  • Grater or food processor
  • Large saucepan
  • Fine mesh strainer or cheesecloth
  • Bottle with a tight-sealing lid
  • Large mixing bowl

Method

  1. Start by grating the fresh ginger.
  2. In a large saucepan, combine the grated ginger, water, and sugar. Bring this mixture to a boil, stirring occasionally to dissolve the sugar.
  3. Once boiling, reduce the heat and let it simmer for about 5 minutes.
  4. Remove the saucepan from the heat and let it cool to room temperature.
  5. Once cooled, stir in the active dry yeast and lemon juice.
  6. Cover the mixture with a clean cloth and let it sit in a warm place for 24 to 48 hours.
  7. After fermentation, strain the mixture through a fine mesh strainer or cheesecloth into a mixing bowl.
  8. Pour the strained ginger beer into your bottle, leaving some space at the top. Seal tightly and refrigerate to stop the fermentation process.

Notes

Serve chilled over ice, garnished with a slice of lemon. Burp the bottles daily during refrigeration to release excess pressure.
