Ginger Beer Mocktail

Ingredients

  • 3 ounces about 3 inches fresh ginger root, peeled and sliced
  • 2 cups water
  • 1/4 cup raw honey
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1 cup sparkling water
  • 3 or 4 whole cloves
  • 1/8 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • Ice cubes for serving
  • Fresh lemon or lime slices for garnish

Method
 

  1. Peel your ginger root using a vegetable peeler or the edge of a spoon. Slice the peeled ginger into thin coins about 1/4 inch thick.
  2. Pour 2 cups of water into your medium saucepan and add the sliced ginger along with the whole cloves.
  3. Bring the water to a boil over medium-high heat, then reduce the heat to medium and let it simmer gently for 5 minutes.
  4. Pour the hot liquid through a fine-mesh strainer into your glass pitcher, pressing lightly on the ginger slices to release any remaining liquid. Discard the ginger solids and cloves, then let the strained liquid cool to room temperature for about 5 minutes.
  5. Stir in the honey, lemon juice, lime juice, sea salt, and vanilla extract into the warm ginger liquid, stirring until the honey dissolves completely.
  6. Transfer the mixture to the refrigerator and let it chill for at least 30 minutes, or up to 24 hours if you have the time.
  7. Fill your serving glasses with ice cubes right before you're ready to serve the mocktail.
  8. Pour about 1/4 cup of your chilled ginger syrup into each glass, then top with 1/4 cup of sparkling water, stirring gently to combine.
  9. Add a fresh lemon or lime slice to each glass and serve immediately while the drink is cold and fizzy.

Notes

Make a larger batch of the ginger syrup at the beginning of the week and store it in a glass bottle in the refrigerator, then you can mix up individual mocktails whenever you want without repeating the cooking process. The ginger syrup can be stored in the refrigerator for up to 10 days or frozen in ice cube trays for up to 3 months.
