Ingredients

  • 2 ounces gin London dry style preferred
  • 1 sugar cube or 1 teaspoon simple syrup
  • 2 to 3 dashes Angostura bitters
  • 1 dash orange bitters optional but recommended
  • Ice large cube preferred, or 3 to 4 regular cubes
  • Orange peel for garnish

Equipment

  • Old fashioned glass (10 to 12 ounces)
  • Bar spoon or long stirring spoon
  • Cocktail jigger for measuring
  • Muddler or back of a wooden spoon
  • Citrus peeler or channel knife
  • Cutting board and paring knife

Method
 

  1. Fill an old fashioned glass with ice and a splash of cold water, then let it chill for 1 minute.
  2. Discard the ice water and place the sugar cube at the bottom of the glass (or pour in simple syrup).
  3. Add Angostura bitters and orange bitters to the glass, then gently muddle the sugar cube for about 5 seconds to form a paste.
  4. Pour in 2 ounces of gin and stir briefly to combine with the sugar and bitters mixture.
  5. Add a large ice cube (or 3 to 4 regular cubes) to the glass.
  6. Stir the cocktail gently for about 10 seconds to chill and dilute slightly.
  7. Express the oils from a strip of orange peel over the drink by holding it skin-side down and giving it a gentle squeeze.
  8. Drop the orange peel into the glass or rest it on the rim and serve immediately.

Notes

Use a gin you enjoy drinking neat; a botanical-heavy gin will yield a different flavor profile than a juniper-forward style.
