Ingredients
  

Main
  • 1.5 ounces 45 ml London Dry gin
  • 4 ounces 120 ml premium ginger beer
  • 0.5 ounce 15 ml fresh lime juice
  • 4-5 ice cubes
  • 1 lime wheel or wedge for garnish

Equipment

  • Cocktail jigger (1.5 ounce and 0.5 ounce measures)
  • Highball or rocks glass
  • Bar spoon or long stirring spoon
  • Cutting board and knife for citrus
  • Citrus juicer or hand-squeeze
  • Ice bucket or freezer

Method
 

  1. Fill a highball or rocks glass halfway with ice cubes.
  2. Measure out 1.5 ounces (45 ml) of gin using a jigger and pour it over the ice.
  3. Slowly pour 4 ounces (120 ml) of chilled ginger beer over the gin, pouring down the side of the glass to preserve carbonation.
  4. Squeeze 0.5 ounce (15 ml) of fresh lime juice directly into the glass.
  5. Use a bar spoon to stir gently for 10 to 15 seconds to combine the ingredients without flattening the ginger beer.
  6. Taste the cocktail and adjust by adding more lime juice if too sweet or more ginger beer if too sharp.
  7. Cut a lime wheel or wedge for garnish.
  8. Place the lime wheel on the rim or drop the wedge into the glass and serve immediately.

Notes

Serve immediately to enjoy full carbonation and chill; keep gin and ginger beer chilled before mixing to minimize dilution.
