Ingredients
  

Main
  • 12 to 15 fresh mint leaves
  • 1 ounce fresh lime juice
  • 2 ounces white rum
  • 0.5 ounce simple syrup
  • 1 to 1.5 cups ice cubes
  • 2 ounces club soda optional
  • Lime wheel or sprig of mint for garnish

  • Measuring jigger or shot glass
  • Citrus juicer or hand squeezer
  • Knife and cutting board
  • Tall drinking glasses
  • Bar spoon or long teaspoon
  • Straws (optional)

Method
 

  1. Rinse 12 to 15 fresh mint leaves under cold water and pat dry thoroughly.
  2. Cut one lime in half and extract 1 ounce of lime juice using a citrus juicer or hand squeezer.
  3. Place the dry mint leaves into the blender to ensure even bruising.
  4. Add 1 ounce of fresh lime juice, 2 ounces of white rum, and 0.5 ounce of simple syrup to the blender.
  5. Fill the blender with 1 to 1.5 cups of ice cubes, depending on desired thickness.
  6. Blend on high speed for 30 to 45 seconds until the mixture is smooth and slushy.
  7. Divide the blended mixture evenly between two tall glasses.
  8. Top each glass with 1 ounce of club soda if using, for a lighter finish.
  9. Garnish each glass with a lime wheel or sprig of mint and serve immediately.

Notes

Serve immediately to prevent dilution. For extra chill, freeze glasses for 10 minutes before serving.
