Ingredients

  • 1 cup fresh lime juice approximately 6 to 8 medium limes
  • 1/2 cup fresh lemon juice approximately 3 to 4 medium lemons
  • 1/2 cup agave nectar or simple syrup
  • 1/2 cup water
  • 1/4 teaspoon salt optional
  • 4 to 5 fresh cilantro sprigs optional, for infusion

Method
 

  1. Roll limes and lemons on a countertop for 30 seconds to soften and increase juice yield.
  2. Halve the limes and juice them with a citrus juicer until you have 1 cup of fresh juice.
  3. Halve the lemons and juice them with a citrus juicer until you have 1/2 cup of fresh juice.
  4. Strain the combined lime and lemon juice through a fine-mesh sieve into a glass pitcher to remove pulp and seeds.
  5. Add 1/2 cup agave nectar, 1/2 cup water, and 1/4 teaspoon salt to the strained juice.
  6. Whisk the mixture for 30 seconds until the agave dissolves completely and the liquid is smooth.
  7. Optionally, gently crush 4 to 5 cilantro sprigs and immerse them in the mix; let infuse for 30 to 45 minutes, then remove the cilantro.
  8. Taste the mix and adjust sweetness or acidity by adding up to 2 tablespoons more agave or a squeeze of fresh lime juice as needed.
  9. Transfer the finished mix into an airtight glass container, label with the date, and refrigerate for up to two weeks.
