- Fill a tall glass with ice cubes, packing them fairly tight so they chill the drink and hold everything in place.
- Measure out 2 tablespoons of your chosen fruit syrup and pour it directly over the ice.
- Slowly pour the cold sparkling water over the syrup and ice, filling the glass about three-quarters full.
- Use a spoon to stir the mixture just enough to combine the syrup with the sparkling water for 10 to 15 seconds.
- If your cream sits at room temperature, place it in the freezer for 30 seconds to chill.
- Slowly pour the heavy cream over the back of a spoon (or down the side of the glass) so it floats on top rather than sinking immediately.
- Serve immediately while the carbonation is still lively and the cream layer is still distinct.
