Ingredients

  • 3 cups fresh kale tightly packed and stems removed
  • 2 medium green apples roughly chopped
  • 1 large lemon peeled if preferred, cut into chunks
  • 2- inch piece fresh ginger peeled and roughly chopped
  • 1 cup filtered water
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon raw honey optional, for extra sweetness
  • Pinch of sea salt

Equipment

  • Cold-press juicer or high-powered blender
  • Cutting board
  • Sharp chef's knife
  • Fine-mesh strainer (if using blender)
  • Large glass or juice pitcher
  • Measuring spoons
  • Citrus juicer or reamer (optional)

Method
 

  1. Remove the thick center stems from your kale by stripping the leafy parts away to avoid bitterness.
  2. Cut the green apples into quarters and remove the seeds, leaving the skin on for extra nutrients.
  3. Peel the ginger with a spoon or peeler and roughly chop it into half-inch pieces.
  4. Cut the lemon into chunks, removing any seeds; peel if using a cold-press juicer.
  5. If using a cold-press juicer, feed the ingredients in order: apple, ginger, kale, then lemon, alternating between soft and hard items.
  6. If using a high-powered blender, add water first, then apple, ginger, kale, and lemon; blend on high for 45 to 60 seconds until smooth.
  7. Pour blended juice through a fine-mesh strainer into a pitcher, pressing gently to extract all liquid.
  8. Stir in cayenne pepper and a pinch of sea salt, then taste and add honey if extra sweetness is desired.
  9. Pour the juice over ice into glasses and serve immediately for maximum nutrition and flavor.

Notes

Store juice in an airtight container in the refrigerator and consume within 24 hours. Drink on an empty stomach or with a light snack to protect enamel.
