Ingredients

Main
  • 20-25 elderflower heads freshly picked
  • 750 ml vodka or another neutral spirit
  • 500 g sugar
  • 1 lemon zested and juiced
  • 500 ml water

Equipment

  • Large glass jar with a lid
  • Fine mesh strainer or cheesecloth
  • Measuring cups and spoons
  • Funnel
  • Clean glass bottles for storage

Method

  1. Start by collecting all your ingredients and equipment. Fresh elderflowers are crucial, so pick them on a dry day to avoid excess moisture.
  2. In a saucepan, combine the water and sugar. Heat gently, stirring until the sugar completely dissolves, creating a simple syrup.
  3. Remove the saucepan from heat. Stir in the zest and juice of the lemon.
  4. In a large glass jar, place the elderflower heads. Pour the warm syrup over the flowers, ensuring they are fully submerged.
  5. Pour the vodka into the jar, covering the elderflowers and syrup.
  6. Seal the jar tightly and give it a gentle shake. Store it in a cool, dark place for about 5 days, shaking it daily.
  7. After 5 days, strain the liquid through a fine mesh strainer or cheesecloth into a clean container.
  8. Using a funnel, pour the finished liquor into clean glass bottles. Seal them tightly and store in the refrigerator.

Notes

Serve this elderflower liquor in cocktails or simply over ice for a refreshing drink.
