Ingredients
  

Main
  • 1 Earl Grey tea bag or 1 teaspoon loose tea
  • 6 fl oz water freshly boiled
  • 2 fl oz whole milk warmed or at room temperature
  • 1/2 teaspoon honey or sugar optional

Equipment

  • Mug or teacup (8 to 10 ounces)
  • Small saucepan or microwave-safe pitcher
  • Spoon
  • Strainer or infuser (optional)

Method
 

  1. Bring 6 ounces of fresh water to a rolling boil (200–212°F) in a kettle.
  2. Pour a small amount of hot water into the mug, swirl for 10 seconds to warm it, then discard the water.
  3. Place the Earl Grey tea bag or infuser with loose tea into the warmed mug.
  4. Pour the boiling water over the tea and let steep undisturbed for 3 to 4 minutes.
  5. While the tea steeps, warm 2 ounces of whole milk over low heat in a saucepan or in a microwave for 20 to 30 seconds.
  6. Remove the tea bag or infuser and gently press against the mug side to extract flavor without squeezing bitter tannins.
  7. Slowly pour the warmed milk into the tea while stirring gently until the drink is evenly colored.
  8. Taste the tea and stir in 1/2 teaspoon honey or sugar if desired.
  9. Adjust the milk-to-tea ratio for creaminess and serve immediately while hot.

Notes

Start with 2 ounces of milk and adjust for desired creaminess; use filtered water for best flavor extraction.
