Dunkin Strawberry Dragonfruit Refresher

A homemade copycat of the Dunkin Strawberry Dragonfruit Refresher that's vibrant, tropical, and refreshing, made with fresh strawberries, dragonfruit, coconut water, and lime.

Ingredients
  

Main
  • 1 cup fresh strawberries hulled and halved
  • 1 cup pink dragonfruit cubed (fresh or frozen)
  • 1 cup coconut water unsweetened
  • 1 cup cold filtered water
  • 3 tablespoons granulated sugar adjust to taste
  • 2 tablespoons fresh lime juice
  • 2 cups ice

Equipment

  • Blender or food processor
  • Measuring cups and spoons
  • Two tall glasses or cups
  • Spoon for stirring
  • Ice maker or ice from freezer
  • Fine mesh strainer (optional)

Method
 

  1. Remove the green tops from the strawberries and cut them in half, then cube the dragonfruit into 1-inch pieces.
  2. Add the halved strawberries and cubed dragonfruit to the blender.
  3. Pour in 1 cup coconut water and 1 cup cold filtered water.
  4. Add 3 tablespoons granulated sugar and 2 tablespoons fresh lime juice to the blender.
  5. Blend on high speed for 45 to 60 seconds until the mixture is completely smooth.
  6. If desired, strain the blended mixture through a fine mesh strainer into a pitcher to remove seeds and pulp.
  7. Divide the ice between two tall glasses, using about 1 cup per glass.
  8. Pour the strawberry dragonfruit mixture evenly over the ice in each glass and stir briefly before serving.

Notes

Serve immediately over fresh ice for the best refreshing taste. Store leftovers in an airtight container in the refrigerator for up to two days and stir before serving.
