Ingredients
  

Main
  • 2 large dragon fruits peeled and cubed (about 3 cups)
  • 1 cup fresh lime juice from about 8 to 10 limes
  • 1/2 cup fresh lemon juice from about 3 lemons
  • 1/4 cup honey or agave syrup
  • 3 cups cold water
  • 1 cup ice cubes
  • Fresh mint leaves for garnish optional
  • Lime wheels for garnish optional

Method
 

  1. Cut each dragon fruit in half lengthwise and scoop out the flesh, then cube to yield about 3 cups.
  2. Roll limes and lemons on the counter, cut in half, and juice to collect 1 cup lime juice and 1/2 cup lemon juice.
  3. Place cubed dragon fruit in a blender with a splash of cold water and blend on high until smooth, about 30 to 45 seconds.
  4. Strain the dragon fruit puree through a fine mesh strainer into a large pitcher, pressing with a wooden spoon to extract all liquid.
  5. Add fresh lime juice and lemon juice to the pitcher and stir well to combine.
  6. Stir in honey or agave syrup until fully dissolved, tasting and adjusting sweetness as needed.
  7. Slowly pour in cold water while stirring, taste to reach desired concentration, then add ice cubes and stir to chill.
  8. Pour into glasses over fresh ice and garnish with mint leaves and lime wheels, then serve immediately.

Notes

Serve immediately or store in the refrigerator without ice for up to 24 hours; add fresh ice before serving to prevent dilution.
