Dragon Fruit Lemonade

Ingredients
  

Main
  • 2 medium dragon fruits about 12 ounces, peeled and cubed
  • 1 cup fresh lemon juice about 6 to 8 lemons
  • 1/2 cup fresh lime juice about 4 limes
  • 3/4 cup granulated sugar or 1/2 cup honey for a smoother sweetness
  • 4 cups cold water or 2 cups water plus 2 cups sparkling water for extra fizz
  • Ice cubes for serving
  • Fresh mint leaves optional, for garnish
  • Lemon or lime slices optional, for garnish

Equipment

  • Blender or food processor
  • Fine mesh strainer or cheesecloth
  • Pitcher (at least 2 quarts)
  • Measuring cups and spoons
  • Citrus juicer or hand squeezer
  • Knife and cutting board
  • Spoon for stirring
  • Glasses for serving

Method
 

  1. Slice the dragon fruits in half lengthwise and scoop out the flesh, then cut into large chunks.
  2. Roll lemons and limes under your hand, halve and juice to yield 1 cup lemon juice and 1/2 cup lime juice.
  3. Blend dragon fruit chunks on high for 60 to 90 seconds until smooth.
  4. Strain the puree through a fine-mesh strainer, pressing with a spoon to remove seeds.
  5. Combine the strained dragon fruit puree, lemon juice, and lime juice in a pitcher.
  6. Add sugar and stir vigorously for 2 to 3 minutes until completely dissolved.
  7. Pour in cold water, stirring to combine; if using sparkling water, add it last and stir gently.
  8. Add ice cubes and chill in the refrigerator for at least 30 minutes.
  9. Pour into glasses, garnish with mint leaves and citrus slices, and serve immediately.

Notes

Chill all ingredients beforehand and stir before serving to maintain an even color and flavor.
