Ingredients

  • 1 ripe dragon fruit
  • 1 cup coconut water or water
  • 1 tablespoon honey optional
  • Juice of 1 lime
  • Ice cubes for serving

Method
 

  1. Cut the dragon fruit in half lengthwise.
  2. Scoop out the flesh with a spoon, avoiding the skin.
  3. Combine the dragon fruit flesh and coconut water in a blender and blend until smooth.
  4. If desired, add honey and blend briefly to incorporate.
  5. Add the lime juice and blend for a few seconds to mix.
  6. Optional: Strain the mixture through a strainer or cheesecloth for a smoother juice.
  7. Fill glasses with ice cubes and pour the juice over the ice.
  8. Serve immediately and enjoy the refreshing dragon fruit juice.

Notes

For best flavor, serve immediately over ice and garnish with mint leaves or a lime slice. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
