Ingredients

  • 1.5 ounces Disaronno amaretto liqueur
  • 0.75 ounces fresh lemon juice
  • 0.5 ounces simple syrup
  • 0.5 ounces egg white approx. one egg white
  • Ice for shaking
  • Lemon twist or cherry for garnish optional

Equipment

  • Cocktail shaker (Boston or mixing)
  • Jigger for measuring
  • Cocktail strainer
  • Bar spoon
  • Coupe glass or cocktail glass
  • Hawthorne strainer (if using Boston shaker)
  • Citrus juicer or reamer

Method
 

  1. Place your coupe glass in the freezer for at least 5 minutes.
  2. Pour 1.5 ounces of Disaronno into a jigger and transfer to the cocktail shaker.
  3. Add 0.75 ounces of freshly squeezed lemon juice to the shaker.
  4. Add 0.5 ounces of simple syrup to the shaker.
  5. Separate one egg white (about 0.5 ounces) and add it to the shaker.
  6. Dry shake vigorously without ice for 10 to 15 seconds to aerate the egg white.
  7. Add ice to the shaker and shake hard for another 10 to 15 seconds to chill the drink.
  8. Strain the cocktail into the chilled coupe glass, allowing the foam to settle on top.
  9. Garnish with a lemon twist or cherry and serve immediately.

Notes

The dry shake is essential for achieving a silky foam; always use fresh lemon juice and quality Disaronno for best results.
