  • 3/4 cup plain Greek yogurt full-fat or low-fat

  • 1/4 teaspoon ground cinnamon
  • 3 to 4 ice cubes optional
  • Pinch of sea salt

Method
 

  1. Remove the pit from each Medjool date by slicing the date lengthwise and gently pulling out the pit with your fingers or a small knife. Rough chop the dates into quarters so they blend more easily into a smooth texture.
  2. Peel your banana and cut it into coins about half an inch thick. This smaller size helps the blender break everything down more evenly and faster.
  3. Pour your Greek yogurt into the blender first, starting with a thicker base ingredient helps the blender blend more efficiently. The yogurt creates a foundation that will help pull the other ingredients down toward the blade.
  4. Pour in your milk and add the vanilla extract. The milk creates the liquid base that lets everything spin smoothly.
  5. Add your chopped dates and banana slices to the blender. Dates can be dense, so adding them in the middle of the liquid helps them blend thoroughly.
  6. Sprinkle the cinnamon and a tiny pinch of sea salt into the blender. The salt might seem odd, but it amplifies all the sweet and vanilla flavors without tasting salty itself.
  7. Secure the lid and blend on high for 60 to 90 seconds, until you reach complete smoothness with no visible date chunks. If your blender is less powerful, you may need two minutes.
  8. If you like your smoothie colder, add three or four ice cubes and blend for another 15 seconds just to combine. Skip this step if you prefer your smoothie at room temperature.
  9. Pour into a tall glass and drink right away for the best flavor and texture. The smoothie separates slightly if it sits, though you can stir it back together.

Notes

Freeze banana slices in advance so you always have them ready, and buy dates in bulk and store them in an airtight container in the fridge for up to three months. Use full-fat Greek yogurt if you can tolerate it, as the fat helps your body absorb fat-soluble vitamins and makes the smoothie more satisfying. Make sure your dates are moist and soft before blending; dry dates create a grainy texture.
