  • 2 large English cucumbers about 1 pound, roughly chopped
  • 1 cup fresh mint leaves loosely packed
  • 1 cup fresh lemon juice about 5 to 6 lemons
  • 1/2 cup granulated sugar or 1/3 cup honey for less sweetness
  • 4 cups cold water
  • Pinch of sea salt
  • Ice cubes for serving
  • Lemon slices and cucumber ribbons for garnish optional

Equipment

  • Cutting board and sharp knife
  • Vegetable peeler (optional)
  • Citrus juicer or reamer
  • Blender or food processor
  • Fine mesh strainer
  • Large pitcher
  • Wooden spoon for stirring
  • Measuring cups and spoons

Method
 

  1. Wash and roughly chop the English cucumbers, leaving the skin on.
  2. Rinse the mint leaves, pat dry, and strip from stems.
  3. Juice the lemons using a juicer or reamer and strain out seeds and pulp.
  4. Blend cucumbers and mint on high speed for about 30 seconds until smooth.
  5. Strain the blended mixture through a fine mesh strainer, pressing with a spoon to extract juice.
  6. Combine cucumber-mint juice, lemon juice, sugar, water, and sea salt in a pitcher and stir for 1 minute to dissolve sugar.
  7. Taste and adjust sweetness or tartness by adding more sugar or lemon juice as desired.
  8. Fill glasses with ice cubes, pour lemonade over ice, and garnish with lemon slices or cucumber ribbons.

Notes

Make this lemonade the night before and let it chill in the fridge; the flavors meld and improve overnight.
