- Tamp the portafilter firmly and evenly, lock it into the group head, and pull a single 1-ounce espresso shot for about 25 to 30 seconds until you have a rich, golden crema.
- Pour 0.5 ounce (about 1 tablespoon) of sweetened condensed milk into the demitasse cup.
- Steam 0.5 ounce of whole milk in a small pitcher at 150 to 160°F for 15 to 20 seconds, creating a thin microfoam.
- Immediately pour the hot espresso into the cup with the condensed milk, emulsifying the two ingredients.
- Slowly pour the steamed milk into the cup, holding back foam with a spoon, and leave a thin layer of foam on top.
- Gently stir the cortadito for about 5 to 10 seconds to combine the condensed milk, espresso, and steamed milk evenly.
- Taste the cortadito and adjust if needed by pulling a gentler shot or adding a touch more condensed milk.
- Serve immediately and enjoy within two minutes for optimal temperature and flavor balance.
