Cognac Old Fashioned

A refined twist on the classic Old Fashioned, using cognac for a smooth, oak-aged depth balanced with bitters, sugar, and a large ice cube.

Ingredients
  

Main
  • 2 ounces cognac VSOP or XO grade preferred
  • 1 sugar cube or 1/2 teaspoon simple syrup
  • 2 to 3 dashes Angostura bitters
  • 1 large ice cube or 2 to 3 regular ice cubes
  • Orange peel for garnish

Equipment

  • Mixing glass or cocktail shaker
  • Bar spoon or long-handled spoon
  • Jigger or measuring cup
  • Rocks glass (10-12 ounce)
  • Ice cube mold for large cubes (or standard ice)
  • Citrus peeler or vegetable peeler
  • Cocktail strainer (if using a shaker)

Method
 

  1. Chill the rocks glass in the freezer for at least two minutes.
  2. Place the sugar cube in the bottom of the chilled glass.
  3. Add 2 to 3 dashes of Angostura bitters directly onto the sugar cube.
  4. Add about a teaspoon of water to help dissolve the sugar cube.
  5. Use a bar spoon to stir and crush the sugar cube against the glass until fully dissolved.
  6. Drop a large ice cube into the glass.
  7. Measure and pour 2 ounces of cognac over the ice cube.
  8. Stir gently for 10 to 15 seconds to combine without aerating.
  9. Twist an orange peel over the drink to express oils, then drop it in as garnish.

Notes

Serve immediately; the drink is best enjoyed fresh and at the perfect temperature.
