Classic Wedding Punch

Ingredients

  • 2 cups fresh lemon juice about 12 lemons
  • 1 cup fresh orange juice about 5 oranges
  • 1 cup pineapple juice
  • 1/2 cup ginger ale
  • 1/2 cup granulated sugar
  • 2 liters ginger ale chilled, added just before serving
  • 1 block ice 4-5 pounds
  • 2 lemons sliced thin
  • 2 oranges sliced thin
  • 1 fresh pineapple peeled and cut into thin spears or chunks
  • Fresh mint leaves for garnish optional

Method
 

  1. Juice 12 lemons and 5 oranges using a juicer or citrus reamer, then strain through a fine mesh sieve to remove pulp and seeds.
  2. In a large pitcher, combine the strained lemon juice, orange juice, and pineapple juice and stir gently to blend.
  3. Add 1/2 cup granulated sugar to the juice mixture and stir for 2 minutes until the sugar dissolves completely.
  4. Cover the juice mixture and refrigerate for at least 1 hour to chill before serving.
  5. While the base chills, wash and slice 2 lemons and 2 oranges into thin rounds and cut the pineapple into spears or chunks.
  6. Place a large ice block in the center of a punch bowl on a sturdy table.
  7. Pour the chilled juice base over the ice block, add 1 liter of chilled ginger ale, and stir gently to combine.
  8. Float the sliced lemons, oranges, pineapple chunks, and fresh mint leaves on top of the punch for garnish.
  9. Taste the punch and adjust sweetness or acidity by adding more ginger ale, pineapple juice, or lemon juice as needed.

Notes

Keep extra ginger ale chilled and top up the punch bowl throughout the event to maintain carbonation and freshness.
