  • 2 oz Japanese whisky Hibiki, Yamazaki, or Hakushu
  • 0.5 oz dry vermouth
  • 2 to 3 dashes Japanese bitters yuzu or Kakegawa
  • Ice large cube or block, enough to fill mixing glass
  • 1 small lemon twist or yuzu peel for garnish

  • Mixing glass or cocktail stirring pitcher
  • Bar spoon with a long handle
  • Jigger (1 oz and 0.5 oz)
  • Cocktail strainer (Hawthorne or julep)
  • Coupe glass or rocks glass, chilled
  • Ice (large cube or block)
  • Vegetable peeler or channel knife
  • Paring knife and cutting board

Method
 

  1. Place your coupe or rocks glass in the freezer and chill for at least 2 minutes.
  2. Fill the mixing glass three-quarters full with large ice cubes to ensure slow dilution.
  3. Measure and pour 2 oz Japanese whisky into the mixing glass using a jigger.
  4. Add 0.5 oz dry vermouth to the mixing glass without rushing the pour.
  5. Add 2 to 3 dashes of Japanese bitters and stir once to pre-distribute them.
  6. Stir the mixture slowly with a bar spoon for 30 seconds, using smooth circular motions.
  7. Place a strainer on the mixing glass and pour the drink into the chilled coupe or rocks glass.
  8. Express the oils from a lemon twist or yuzu peel over the surface, then place the twist on the drink.

Notes

Serve immediately after straining to preserve the precise temperature and balance. Large format ice and slow stirring are key to minimal dilution.
