Method
- Line a fine mesh strainer with four layers of cotton cheesecloth and set it over a clean bowl or pitcher.
- Pour 1 cup fresh lime juice, 8 ounces silver tequila, 4 ounces Cointreau, and 2 tablespoons agave nectar into a cocktail shaker or mason jar and stir for 30 seconds until the agave dissolves.
- Slowly pour the mixture into the cheesecloth-lined strainer and allow it to drip through by gravity.
- Let the liquid strain for 3 to 4 hours without pressing or squeezing the cheesecloth to maintain clarity.
- After straining, check the clarity; if any cloudiness remains, re-strain through fresh cheesecloth.
- Add a pinch of sea salt to the clarified liquid and stir gently to combine.
- Transfer the clarified margarita base to a clean bottle and refrigerate until ready to serve, up to 2 days.
- When serving, shake 3 ounces of the base with ice for 10 seconds and strain into a chilled glass filled with fresh ice; garnish with a lime wheel.
Notes
Prepare the clarified base up to 2 days ahead and store refrigerated; do not squeeze the cheesecloth to preserve crystal clarity.
