Method
- Preheat the oven to 375°F (190°C).
- Peel sweet potatoes and slice into 1/4 inch thick rounds.
- In a small saucepan over medium heat, melt butter until it foams, then add bourbon and simmer for 1 minute.
- Remove from heat and whisk in brown sugar, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, salt, and pepper until smooth.
- Lightly butter a 9 by 13 inch baking dish and arrange half of the sweet potato slices in an overlapping layer.
- Pour half of the bourbon sauce over the first layer, making sure it seeps between the slices.
- Arrange remaining sweet potato slices on top and pour the remaining sauce evenly over them.
- Cover the baking dish tightly with foil and bake for 30 minutes.
- Uncover and bake for an additional 10 to 15 minutes until edges are caramelized and sauce is thickened.
- If using pecans, sprinkle them on top in the last 2 minutes of baking to lightly toast.
- Let the dish rest for 5 minutes before serving to allow the sauce to set.
Notes
These bourbon sweet potatoes can be assembled a day ahead and reheated in a 325°F oven for 20 minutes before serving.
