  • 2 ounces bourbon whiskey
  • 0.75 ounces fresh lemon juice
  • 0.5 ounces simple syrup
  • 1 egg white
  • Ice cubes
  • Lemon wheel or twist for garnish

  • Coupe glass or cocktail glass
  • Citrus juicer
  • Small bowl for separating egg white

Method
 

  1. Prepare your ingredients by juicing fresh lemons to yield 0.75 ounces and measuring your bourbon and simple syrup.
  2. Separate the egg white from the yolk in a small bowl, ensuring no yolk is mixed in.
  3. Dry shake the egg white alone in the cocktail shaker for 10 seconds to build foam.
  4. Add 2 ounces bourbon, 0.75 ounces lemon juice, and 0.5 ounces simple syrup to the shaker without removing the foam.
  5. Fill the shaker three-quarters full with ice cubes and seal tightly.
  6. Shake vigorously for 12 to 15 seconds until the shaker is frosty.
  7. Strain the mixture into a chilled coupe or cocktail glass using a Hawthorne strainer to hold back ice.
  8. Garnish with a lemon wheel or twist by expressing the oils over the drink and placing it on top of the foam.

Notes

Serve immediately while the foam layer is still silky and the drink is properly chilled.
