- Measure out the cinnamon sticks, cloves, allspice berries, and star anise into a small bowl.
- Add the bourbon, brandy, and dark rum to a large saucepan over medium heat, warming gently without boiling.
- Pour in the apple juice or cider and stir to combine with the spirits.
- Add the cinnamon sticks, whole cloves, allspice berries, and star anise to the pot and stir gently.
- Slice the orange and lemon into thin rounds, add them to the pot along with the honey.
- Grate a pinch of fresh nutmeg into the mixture and stir well.
- Reduce heat to low and simmer gently for 10 to 15 minutes, stirring occasionally, without boiling.
- Remove from heat, taste a spoonful, and adjust by adding more honey for sweetness or a splash of spirits for strength.
- Strain through a fine mesh strainer into a serving vessel or ladle into mugs, including citrus slices and spices for garnish.
Notes
Keep warm in a slow cooker on low for several hours to allow flavors to deepen before serving.
