Ingredients
  

Main
  • 2 cups bourbon or rye whiskey
  • 1 cup brandy
  • 1 cup dark rum
  • 1 quart apple juice or cider
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 4 whole allspice berries
  • 2 star anise pods
  • 1 orange sliced into rounds
  • 1 lemon sliced into rounds
  • 1/2 cup honey
  • Pinch of freshly grated nutmeg
  • 1 tablespoon molasses optional

Equipment

  • Large saucepan or small pot
  • Wooden spoon
  • Measuring cups and spoons
  • Ladle
  • Mugs or heat-safe glasses
  • Fine mesh strainer (optional)
  • Citrus zester or microplane (optional)

Method
 

  1. Measure out the cinnamon sticks, cloves, allspice berries, and star anise into a small bowl.
  2. Add the bourbon, brandy, and dark rum to a large saucepan over medium heat, warming gently without boiling.
  3. Pour in the apple juice or cider and stir to combine with the spirits.
  4. Add the cinnamon sticks, whole cloves, allspice berries, and star anise to the pot and stir gently.
  5. Slice the orange and lemon into thin rounds, add them to the pot along with the honey.
  6. Grate a pinch of fresh nutmeg into the mixture and stir well.
  7. Reduce heat to low and simmer gently for 10 to 15 minutes, stirring occasionally, without boiling.
  8. Remove from heat, taste a spoonful, and adjust by adding more honey for sweetness or a splash of spirits for strength.
  9. Strain through a fine mesh strainer into a serving vessel or ladle into mugs, including citrus slices and spices for garnish.

Notes

Keep warm in a slow cooker on low for several hours to allow flavors to deepen before serving.
