  • 1.5 cups fresh or frozen blueberries
  • 1 ripe banana sliced
  • 1 cup pineapple juice fresh or canned
  • 0.75 cups coconut milk canned or carton
  • 0.5 cup Greek yogurt plain
  • 0.5 cup ice cubes
  • 1 tablespoon honey or agave syrup optional, for extra sweetness
  • Pinch of sea salt

Method
 

  1. Measure out all ingredients before starting to ensure a smooth blending process.
  2. Pour 1 cup pineapple juice and 0.75 cups coconut milk into the blender.
  3. Add 1.5 cups blueberries and 0.5 cup ice cubes on top of the liquids.
  4. Place 1 sliced ripe banana and 0.5 cup plain Greek yogurt into the blender.
  5. Sprinkle a pinch of sea salt and add 1 tablespoon honey or agave syrup if extra sweetness is desired.
  6. Secure the lid and start blending on low speed for 10 seconds to combine ingredients gently.
  7. Increase to high speed and blend for 30 to 45 seconds until the mixture is completely smooth.
  8. Check consistency; if too thick add a splash of pineapple juice and blend for 5 more seconds, or if too thin add more ice or frozen berries.
  9. Pour into two glasses immediately and serve fresh.

Notes

Freeze ripe bananas and blueberries in portion-sized bags so you can grab them on busy mornings and blend straight from frozen without thawing first.
