  • 4 cups fresh blackberries or frozen
  • 1 cup water
  • 2 tablespoons honey optional, for sweetness
  • 1 tablespoon fresh lemon juice
  • Pinch of sea salt

  • Potato masher or the back of a wooden spoon

Method
 

  1. Gently rinse 4 cups of fresh blackberries under cool water and pat dry.
  2. Place the rinsed blackberries into a large pot or saucepan.
  3. Add 1 cup of water to the pot with the berries.
  4. Heat the mixture over medium heat for 3 to 5 minutes, stirring occasionally, until the berries soften and begin to release their juice.
  5. Remove the pot from heat and use a potato masher or the back of a wooden spoon to mash the softened berries, pressing against the sides to extract as much juice as possible.
  6. Set a fine mesh strainer or cheesecloth over a large bowl or pitcher and pour the mashed berry mixture through it, pressing gently with the back of a spoon to extract the liquid.
  7. Transfer the strained juice back to a clean pot or pitcher. Stir in 1 tablespoon fresh lemon juice, 2 tablespoons honey if desired, and a pinch of sea salt until the honey dissolves completely.
  8. Allow the juice to cool to room temperature, then refrigerate for at least 1 hour. Serve over ice and enjoy within three days for best flavor.

Notes

Press the berry solids gently during straining to keep the juice clear. Adjust honey or lemon juice to taste and serve chilled.
