  • 1 medium raw beet peeled and chopped (about 1 cup)
  • 1 cup fresh or frozen blueberries
  • 1 ripe banana sliced
  • 1 cup unsweetened almond milk or milk of choice
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon raw almond butter
  • 1 tablespoon raw honey or maple syrup
  • 1/2 cup ice cubes
  • Pinch of ground ginger optional

  • High-powered blender or food processor
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Two tall glasses
  • Large spoon for stirring

Method
 

  1. Wash and peel the raw beet, then chop into rough 1-inch chunks.
  2. Measure 1 cup of blueberries and 1/2 cup of ice cubes.
  3. Peel and slice the banana into 1/4-inch rounds.
  4. Pour 1 cup of almond milk into the blender as the liquid base.
  5. Add the chopped beet, blueberries, banana slices, Greek yogurt, and almond butter.
  6. Drizzle honey or maple syrup over the ingredients and add a pinch of ground ginger.
  7. Top with ice cubes to ensure a thick, frosty consistency.
  8. Blend on high speed for 45 to 60 seconds, or until completely smooth.
  9. Pour the smoothie into two tall glasses and serve immediately.
