Ingredients

  • 2 ripe bananas peeled and sliced
  • 1 cup whole milk
  • 1/2 cup heavy cream optional
  • 2 shots espresso about 2 ounces
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon honey or maple syrup optional
  • Pinch of sea salt

  • Blender or immersion blender
  • Espresso machine or stovetop moka pot
  • Small saucepan
  • Milk steamer or whisk
  • Measuring cups and spoons
  • Tall coffee mugs or glasses
  • Spoon for stirring

Method
 

  1. Slice ripe bananas into chunks and add to blender.
  2. Pour 1 cup whole milk and 1/2 cup heavy cream into blender with bananas.
  3. Blend on high speed for 60 seconds until smooth.
  4. Strain banana mixture through a fine-mesh strainer into a small saucepan.
  5. Heat banana milk over medium heat for 3 minutes, stirring occasionally, until steaming but not boiling.
  6. Stir in vanilla extract, ground cinnamon, ground nutmeg, and a pinch of sea salt until combined.
  7. Pull 2 shots of espresso (about 2 ounces) while the banana milk heats.
  8. Divide espresso between two mugs and pour hot banana mixture over espresso while stirring.
  9. Taste and add honey or maple syrup as desired for extra sweetness.

Notes

Serve immediately and adjust sweetness to taste. Store the banana mixture in a sealed container in the refrigerator for up to 3 days.
