Ingredients
  

Main
  • 1.5 cups frozen pineapple chunks
  • 1 frozen banana sliced
  • 0.75 cup coconut milk canned or carton
  • 0.5 cup orange juice freshly squeezed or store-bought
  • 2 tablespoons honey or agave syrup
  • 0.25 teaspoon vanilla extract
  • 0.25 cup crushed ice optional
  • Pinch of sea salt

Equipment

  • High-powered or standard blender
  • Measuring cups and spoons
  • Two tall glasses
  • Cutting board
  • Knife

Method
 

  1. Add frozen pineapple chunks and sliced frozen banana to the blender.
  2. Pour in coconut milk and orange juice over the fruit.
  3. Add honey or agave syrup and vanilla extract to the blender.
  4. Sprinkle a pinch of sea salt and add crushed ice if desired.
  5. Blend on high speed for 45 to 60 seconds until completely smooth and creamy.
  6. Check the consistency and add more orange juice or coconut milk one tablespoon at a time if too thick.
  7. If the smoothie is too thin, add additional frozen pineapple chunks or coconut cream and blend again.
  8. Divide the smoothie between two tall glasses and serve immediately.

Notes

Best enjoyed fresh; leftovers can be frozen for up to one hour and re-blended briefly before serving.
