  • 1 ounce light rum white or silver
  • 1 ounce dark rum aged or spiced
  • 0.75 ounce fresh lemon juice
  • 0.5 ounce simple syrup
  • 2 dashes absinthe or anise liqueur optional
  • 1 cup ice cubed
  • 1 lemon twist or wheel for garnish

Method
 

  1. Chill your coupe glass in the freezer for at least 2 minutes.
  2. Measure and pour 1 ounce of light rum into the cocktail shaker using a jigger.
  3. Add 1 ounce of dark rum to the shaker.
  4. Pour 0.75 ounce of fresh lemon juice into the shaker.
  5. Add 0.5 ounce of simple syrup.
  6. Add 2 dashes of absinthe or anise liqueur if using.
  7. Fill the shaker three-quarters full with ice cubes.
  8. Shake vigorously for 10 to 12 seconds until the shaker frosts over.
  9. Strain the cocktail into the chilled coupe glass using a Hawthorne strainer.
  10. Garnish with a lemon twist by expressing the oils over the drink and dropping it in.

Notes

Use fresh lemon juice and homemade simple syrup for the brightest flavor. Precision with measurements ensures a balanced cocktail.
