  • 1 packet Belgian Saison yeast
  • 5 gallons filtered water

Equipment

  • Brew kettle (minimum 5 gallons)
  • Fermentation vessel with airlock
  • Hydrometer
  • Bottling bucket
  • Bottles and caps
  • Thermometer

Method

  1. Sanitize all your equipment to prevent contamination.
  2. In your brew kettle, heat 3.5 gallons of filtered water to around 165°F.
  3. Add the crushed Pilsner malt and flaked wheat to the hot water and stir.
  4. Maintain the mash temperature at about 150°F for 60 minutes.
  5. After mashing, rinse the grains with hot water and collect the wort in your kettle.
  6. Bring the wort to a boil and add the Styrian Goldings hops.
  7. Boil for 60 minutes, adding Saaz hops during the last 15 minutes.
  8. Once the boil is complete, cool the wort quickly using an immersion chiller or an ice bath.
  9. Transfer the cooled wort to your fermentation vessel and pitch the yeast.
  10. Seal the vessel with an airlock and place it in a cool, dark area for 1 to 2 weeks.
  11. Once fermentation is complete, mix priming sugar with a small amount of water and add it to your bottling bucket.
  12. Fill your bottles, cap them, and let them carbonate for another 2 weeks.
