Ingredients

Main
  • 1 medium ripe pineapple peeled and chopped
  • 1 cup sugar preferably cane sugar
  • 4 cups water filtered or distilled
  • 1/4 cup starter culture such as whey or a probiotic powder
  • Optional: Fresh mint or ginger for added flavor

Equipment

  • Large glass jar or fermentation vessel
  • Cheesecloth or breathable cloth
  • Rubber band or string
  • Measuring cups
  • Wooden spoon
  • Bottle with a tight seal for storage

Method

  1. Start by peeling and chopping the pineapple into small pieces.
  2. In a large bowl, combine the sugar with water. Stir until the sugar is completely dissolved.
  3. Add the chopped pineapple to the jar and pour the sugar-water mixture over it.
  4. Stir in the starter culture, whether it’s whey or probiotic powder.
  5. Cover the jar with cheesecloth and secure it with a rubber band.
  6. Place the jar in a warm, dark spot for 3-7 days.
  7. After 3 days, taste the drink. If it’s fizzy and tangy enough, it’s ready to be strained.
  8. Once fermented to your taste, strain out the solids and transfer the liquid to a bottle with a tight seal.

Notes

Taste daily to find your perfect balance of sweetness and tang. Store the final drink in the fridge to slow fermentation and preserve flavor.
