Ingredients

Main
  • 1 cup grated fresh ginger
  • 1 cup granulated sugar
  • 2 cups water boiling
  • 1/4 teaspoon active dry yeast
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups cold water

Equipment

  • Large mixing bowl
  • Whisk
  • Funnel
  • Clean glass bottles with caps
  • Fine mesh strainer
  • Measuring cups and spoons

Method

  1. In a large mixing bowl, combine the grated ginger, sugar, and boiling water. Stir until the sugar dissolves, creating a ginger syrup.
  2. Let the ginger syrup cool to room temperature.
  3. Once cool, sprinkle the active dry yeast over the ginger mixture. Stir gently to combine.
  4. Cover the bowl with a clean cloth and let it sit at room temperature for about 24 hours.
  5. After 24 hours, strain the ginger mixture through a fine mesh strainer into another large bowl.
  6. Stir in the lemon juice and cold water to the strained ginger liquid.
  7. Using a funnel, pour the ginger beer into clean glass bottles, leaving some space at the top for carbonation. Seal the bottles tightly.
  8. Refrigerate the bottles for at least 4 hours before serving.

Notes

Always use caution when opening the bottles after fermentation, as the carbonation can cause a fizzy overflow.
