Ingredients

Main
  • 4 cups frozen rhubarb chopped
  • 1 cup sugar
  • 2 cups water
  • 1 cup white wine like Sauvignon Blanc
  • 1 tablespoon lemon juice

Equipment

  • Large pot
  • Wooden spoon
  • Strainer or cheesecloth
  • Bottle or pitcher for storage
  • Freezer-safe container

Method

  1. Start by chopping your frozen rhubarb into small pieces.
  2. In a large pot, combine the chopped rhubarb, sugar, and water over medium heat.
  3. Stir occasionally until the sugar dissolves completely and the rhubarb starts breaking down.
  4. Allow the mixture to simmer for about 20 minutes.
  5. Using a strainer or cheesecloth, strain the mixture into a bowl or pitcher.
  6. Mix in the white wine and lemon juice into the strained rhubarb liquid.
  7. Transfer the wine mixture into a freezer-safe container.
  8. Let it chill for at least 4 hours or until frozen.
  9. Once frozen, take the container out and let it sit for a few minutes.
  10. Use a fork to scrape and blend it into a slushy texture before serving.
  11. Pour the slushy rhubarb wine into glasses and enjoy immediately.

Notes

Make sure to let the wine mixture chill enough before serving to achieve the perfect slushy texture.
