Ingredients

Main
  • 6.6 lbs malted barley extract
  • 1 lb dark malt
  • 0.5 lb chocolate malt
  • 1 oz Fuggle hops
  • 0.5 oz East Kent Goldings hops
  • 4 oz cherry extract
  • 1 cup cocoa powder
  • 1 packet yeast ale strain
  • priming sugar for bottling

Equipment

  • Brew kettle (at least 5 gallons)
  • Fermentation vessel with airlock
  • Heat source (stove or burner)
  • Thermometer
  • Hydrometer
  • Siphon and bottling setup
  • Sanitizing solution

Method

  1. Start by bringing about 3 gallons of water to a boil in your brew kettle.
  2. Once the water is boiling, stir in the malted barley extract until fully dissolved.
  3. Add the dark and chocolate malts to the boiling mixture and simmer for about 15 minutes.
  4. Introduce the Fuggle hops and continue to boil for another 30 minutes.
  5. After 30 minutes, stir in the cherry extract and cocoa powder.
  6. Remove the kettle from heat and cool the mixture quickly using an immersion chiller or an ice bath.
  7. Once cooled, transfer the mixture to your fermentation vessel and top off with water to reach 5 gallons.
  8. Add the yeast to the cooled mixture and seal the fermentation vessel with an airlock.

Notes

Use fresh ingredients for the best flavor; stale malt can ruin your brew.
