Ingredients

Main
  • 12-15 pounds fresh blueberries
  • 10 pounds granulated sugar
  • 4 gallons water
  • 1 packet of wine yeast like Lalvin 71B
  • 1 tablespoon acid blend
  • 5 Campden tablets optional, for sanitizing

Equipment

  • 5-gallon fermentation bucket with lid
  • Airlock
  • Hydrometer
  • Wine bottles and corks
  • Large pot for boiling
  • Strainer or cheesecloth
  • Sanitizing solution

Method

  1. Sanitize all your equipment using a sanitizing solution.
  2. Wash the fresh blueberries thoroughly and crush them to release their juices.
  3. In a large pot, bring 4 gallons of water to a boil, then add 10 pounds of sugar, stirring until it dissolves.
  4. Add the crushed blueberries to the fermentation bucket and pour the hot sugar water over them, mixing well.
  5. Allow the mixture to cool to room temperature before adding the wine yeast and acid blend, stirring gently.
  6. Cover the fermentation bucket and insert the airlock. Let the mixture ferment for about 4-6 weeks.
  7. After fermentation is complete, strain the mixture into clean bottles, avoiding the sediment.
  8. Cork the bottles and store them in a cool, dark place to age for at least 3 months.
